Maturation Philosophy
Portugal’s warm climate accelerates interaction between spirit and wood. We have worked tirelessly to counter the higher temperature with innovation in warehouse architecture design. We embrace a graceful evolution — avoiding harsh over-extraction to achieve whisky that is layered, rounded,
and refined.
Cask Sourcing
We draw from the great wine regions around us, selecting casks that enhance our new make spirit and shape the whisky it will become.​
With roots in Portuguese, Bordeaux, Burgundy, and Italian wines, we weave Old World traditions into our whisky, adding elegance and depth.
Madeira, Port, and Moscatel play a central role, while Oloroso and PX sherry bring richness, sweetness, and darker tones. Each cask is chosen for provenance and character, ensuring maturation elevates — never overpowers — the spirit.
